Chicken Fajitas (Ketogenic)

I don't know about you, but for my part I love fedgrass chicken meat. I cook it really often, like 3-4 times a week (or I alternate with turkey.)

Today I present you a quickly ready recipe; in less than 30 minutes you have your meal ready to be served and tasted!
I love to cook with spices and who doesn't like the taste of Tex-Mex cuisine?
Ingredients x2 :
- A good handful of lamb's lettuce - 4 cherry or elongated tomatoes - 4 sticks of defibrated celery (more or less, according to your tastes, I love it so I tend to put a lot.) - 1 medium yellow onion - 1/2 bellpepper (so I use yellow because it is the one I prefer and I like yellow color, but it is also very good with red or even green!) - 0.6lbs of chicken fillet
- 1.4 oz of butter (or margarine) -> yes, I know it seems a
lot, but it's normal it's for keto. If you want to adapt the recipe and not make it in keto, I advise you to divide by 2 to 4 the fat content. You can even use olive oil. 10ml per person, so 20ml for 2.)
- Pepper (from the mill, it's better, finally it's a personal preference)
- 1 small packet of seasoning spices for Fajitas
- 2.6oz grated cheddar
Preparation :
We generally present this type of dish in a large bowl or in plates with edges (personally I use stainless steel plates which are used in India to serve the dishes. They belonged to my darling's grandfather.)
1.) Cut the chicken into medium strips. 2.) In a pan, melt the butter and add the chicken. Fry until it is almost cooked 3.) In parallel, mince your onion into strips and mix it with the fajita spice mixture. 4.) Once the chicken has the desired consistency, add the onion-spice mixture to fajitas, mix well and simmer over medium heat for a few minutes, while the onion is cooking. 5.) Meanwhile, mince your celery into thin strips. 5.) Prepare your plate by arranging the lamb's lettuce, the tomatoes, the bellpepper and the celery. Add the chicken and its sauce on the side, then the cheddar to finish on top.
If desired, you can add a good tablespoon of sour cream or greek yogurt. (this is the gluttonous +++ version that I make for my hubby but for my dish I do not use it because of my partial lactosis intolerence, and I think that the recipe is already quite "fat" as that for me.) And Voilà
